Ingredients
- 1 lb pork tenderloin
- 3/4 teaspoon Kosher Salt divided
- 1/2 teaspoon Ground Cumin
- 1/4 teaspoon Garlic Powder
- 1/4 teaspoon black pepper
- 2 teaspoons Canola Oil
- 1 cup chopped fresh strawberries
- 1/2 ripe avocado peeled, pitted and diced
- 1/4 cup finely chopped red onion
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice

- Instructions: 1 Trim Pork, and cut crosswise into 12 slices. Combine 1/2 teaspoon kosher salt, the cumin, garlic powder, and pepper in a small bowl. Arrange pork slices on a cutting board, and press to an even thickness. Rub pork evenly with spice mixture. 2 Heat oil in a large nonstick skillet over medium high heat. Add Pork, and cook 3 minutes on each side or until a meat thermometer register 145 degrees. Remove from heat and let stand 5 minutes. 3. Combine strawberries, avocado, onion, cilantro, lime juice, and remaining 1/4 teaspoon salt in a bowl: toss gently. 4.
